Dario di Vaira
Since the late '90s, the Dario di Vaira winery has decided to invest in quality, definitively giving up large quantities. Thus, they started from the vineyard, adopting an agriculture respectful of the plant and the surrounding environment and drastically reducing the average yield. On the clayey-sandy soils, various red grape varieties are grown: from Sangiovese, the king of Tuscany, to the greatest international grape varieties cultivated in these lands to produce the renowned Supertuscans, Merlot, Cabernet Sauvignon, Syrah, and Petit Verdot. As for white varieties, there are Chardonnay, Viognier, and Vermentino. After a manual harvest, the grapes are brought to the winery where alcoholic fermentation takes place in temperature-controlled steel containers with the most modern equipment. Aging occurs, mainly for the reds, in new or used French oak barriques.
