Dipoli Peter
The cultivated area of the Peter Dipoli estate is distributed across several plots dedicated to international grape varieties Sauvignon Blanc, Merlot, and Cabernet Sauvignon. Specifically, the Sauvignon Blanc is grown between 500 and 600 meters above sea level on steep terraced slopes characterized by sandy soils, with a strong presence of calcareous skeleton of dolomitic origin. Instead, the Merlot and Cabernet Sauvignon rest on predominantly clay and limestone soils. For the reds, fermentation takes place in open steel or wooden tanks in contact with the skins while the subsequent aging periods occur in new or used oak barriques. Instead, the Sauvignon Blanc is entirely vinified and matured in large acacia barrels, without undergoing malolactic fermentation, in order to preserve the wine's pronounced freshness.
