Guinot
The Maison Guinot is a historic production reality of Blanquette de Limoux, the oldest sparkling wine in France obtained through bottle fermentation, in the Rousillon region. It was founded in 1875 by the herbalist and winemaker Gédéon Guinot, a pioneer of a rigorous production method inspired by the "Méthode Champenoise", with manual remuage and manual degorgement "à la volée". In 1913, the Maison produced the first Crémant de Limoux, made from different grapes of the typical Mauzac, and in 1938, it inaugurated exports to Japan, contributing to the fame of this type worldwide and to the recognition of the Aoc. Today, after more than 140 years of history, the Maison still follows the production methods inaugurated by the founder and has remained in the ownership of the Guinot family.
The family vineyards extend over approximately 26 hectares in the Limoux area. The most cultivated variety is Mauzac, the protagonist of Blanquette, which coexists with grape varieties such as Chardonnay and Chenin Blanc. In the cellar, vinifications take place separately by type of grapes, followed by blending for the preparation of the cuvées. After bottle fermentation according to the Traditional Method, the wines rest on the lees in the bottle from 0 months to 5 years, depending on the labels. The riddling is still done manually and the Maison Guinot is today the last producer that continues to do so, as a sign of respect for the ancient territorial traditions and artisanal care of the productions. Every morning, for 30 days, manual riddling is performed on more than 30,000 bottles!
