La Palazzola

Located in Stroncone, a few kilometers away from the city of Terni, the Umbrian wine estate La Palazzola has established itself for its daring and eclectic originality in production. The winery, specialized in the production of Metodo Classico sparkling wines as well as still wines, is led by Stefano Grilli, a true lover of experimentation who gave up his engineering career to embark on a new adventure, starting this beautiful wine project in collaboration with the renowned winemaker Riccardo Cotarella. The name La Palazzola comes from the homonymous hill near the winery, where the ruins of an ancient medieval tower stand.

The varietal platform of the La Palazzola estate, spread over 28 hectares of vineyards, is absolutely original, comprising a wide combination of native and international varieties such as Sangiovese, Pinot Nero, Chardonnay, Riesling Renano, Verdello, Ciliegiolo, Trebbiano, Malvasia, Vermentino, Traminer Aromatico, Sauvignon Blanc, Syrah, Cabernet Sauvignon, and Merlot. The vines, cultivated under a biological regime,biological, benefit from an altitude of 300 meters above sea level and the clayey matrix of the soils, which are also rich in skeleton. As a lover of experimentation, for the fermentation and maturation processes, Stefano Grilli adopts a wide variety of wine containers, such as terracotta amphorae, wooden barrels, and stainless steel tanks. Meanwhile, the sparkling wine production occurs in bottles through a technique that is halfway between Metodo Ancestrale and Metodo Classico, interrupting the first fermentation by lowering the temperature and then resuming it in the bottle, thus avoiding the addition of exogenous sugars and with long aging on the lees in glass. Finally, in the case of Vin Santo Occhio di Pernice Amelia, the prolonged aging takes place in small sealed barrels left empty, as per tradition.
