Tony Bornard
The sought-after production of Domaine Tony Bornard stands out for authenticity and class, reflecting the artisanal winemaking philosophy of its creator who operates within the municipality of Pupillin, in the wine region of Jura. Tony is the son of the famous vigneron Philippe Bornard, from whom he inherited the estate in 2017, merging it with the one he had independently founded in 2013. The winery, located in the oldest building in Pupillin, is the place where Tony experiments, shaping pure and sincere wines that respect varietal and territorial characteristics. Before embarking on his winemaking journey, Tony gained work experience at a large Australian estate where, by his own admission, he learned to apply everything he does not want to do to his wines, such as highly invasive winemaking techniques and practices.
The estate of Tony Bornard covers just over 11 hectares of vineyards managed according to the principles of organic and biodynamic agriculture. The vineyard area, planted on soils composed of schist and blue, gray, and red, is dedicated to the native grape varieties Poulsard, called Ploussard in Pupillin, Trousseau, and Savagnin, as well as those of Burgundian origin Pinot Noir and Chardonnay, varieties that have found an ideal habitat in the Jura region, giving rise to expressions of absolute quality. To demonstrate this, in this wine region, Chardonnay has genetically mutated into the Melon à Queue Rouge grape. The term rouge for this grape does not refer to the color of the berries, which are yellow, but to the peculiar hue of the stem. All fermentations occur completely spontaneously, and the processing of the musts takes place in total respect for the raw material, excluding the use of additives and enological aids, including sulfur. Aging takes place almost exclusively in oak barrels, with some wines maturing instead in fiberglass tanks.
