Torti Pietro

Among the hills of Montecalvo Versiggia, a small municipality in the Oltrepò Pavese, for 5 generations the Torti family has dedicated itself to viticulture with passion and love, becoming indissolubly linked to this land that has made sparkling wines its great enological vocation. The winery bears the name of Alessandro's father, the current owner who inherited the estate in 1990. “We must respect what the land gives us” is the family motto, constantly repeated by Pietro and now embraced by Alessandro and his daughter Chiara, a student of oenology who has been following him in his work for years. The winery is part of the associations VinNatur and FIVI. The former was founded with the idea of producing in full respect of the territory, the vine, and natural cycles, while the FIVI winemaker cultivates, vinifies, bottles, and markets completely independently.

The owned vineyards extend over an area of about 10 hectares and since 2015 can boast organic certification. The vines are up to 40 years old and are rooted in compact soilsmainly clayey and silty, poor in organic matter and rich in mineral salts. Croatina, Barbera, Uva Rara, and Riesling Italico represent the local varieties cultivated by Alessandro Torti, to which Pinot Nero and Chardonnay are added, grapes from which the sparkling wines are made. The production approach involves the use of agronomic and oenological techniques that do not alter or mask the imprint of the vine and the territory. In this perspective, practices such as cover cropping and fertilization with organic matter are adopted in the fields, while in the winery the use of selected yeasts and sulfites is limited. The musts are worked in steel tanks and oak barrels, depending on the label in question, and the Metodo Classico spends at least 30 months on the lees after tirage, a period during which they enrich their aromatic profile.
