Cuvage
The Cuvage winery is a young reality in the panorama of Italian sparkling wine. It was founded in 2011 in Acqui Terme, in the province of Alessandria, with the aim of creating a range of Metodo Classico labels inspired by the most ancient Piedmontese tradition and capable of offering bottles of excellent quality. The name comes from the fusion of two emblematic words from the world of sparkling wine: Cuvée and Perlage. The company immediately distinguished itself for a particular choice regarding the selection of grape varieties. In addition to vinifying the typical grapes of international tradition: Pinot Nero and Chardonnay, it has focused heavily on the use of Nebbiolo, the most famous native Piedmontese variety in the world, usually used to produce great red wines for long aging.
Thanks to its floral aromas, elegant notes of small berries, its structure, and vibrant freshness, Nebbiolo has proven to possess excellent qualities to give life to blends or pure versions of excellent quality,quality, whether vinified as white or rosé. This choice has allowed Cuvage to stand out in the Italian sparkling wine scene, carving out a unique space characterized by the desire to express the characteristics of the Piedmontese territory, its history, and its ancient and prestigious traditions in a direct and authentic way. Passion and experience have supported the project since its inception, allowing the winery to achieve an excellent quality level in just a few years.
Particular attention has always been given to the grapes, which come only from carefully selected vineyards. To achieve maximum complexity and expressive harmony, Cuvage has chosen vineyards in different areas of Piemonte, characterized by diverse soils—calcareous, clayey, ferrous—each of which imparts unique characteristics. This wide availability of base wines with different personalities allows the Chef de Cave to create perfectly balanced blends, which will then compose the different cuvées. The production process then follows all the stages of the Metodo Classico, with Tirage, Prise de Mousse, and bottle refermentation, the aging phase on the lees in stacks, Remuage, Disgorgement, and the final touch of the Liqueur d’Expedition. This results in a range of labels of excellent quality, a perfect expression of the territory.
