Vallisto

Founded by three producer partners, Hugh Ryman, Marcelo Pelleriti, and Francisco Lavaque, the Argentine winery Vallisto specializes in producing wines that reveal the vocation of the territory of the Calchaqui Valleys with its incredible altitudes, combining tradition and innovation. This joint venture was launched in 2010 in Cafayate, a town in the province of Salta, in the north of the country, with the aim of enhancing Argentine enology in general and the Cafayate area in particular with its chosen grape variety: Malbec. The three winemakers immediately committed to recovering old vineyards in the area that were close to abandonment. The name “Vallisto” pays homage to the indigenous people of the Cafayate Valley.

At the foot of the Andes mountain range, on particularly rocky soils, the Vallisto winery primarily cultivates Malbec, a black grape variety of Bordeaux origin that has made history in Argentine enology, adapting exceptionally well to the remarkable altitudes of the country's wine-growing areas. Alongside Malbec, they also cultivate Merlot, País, Torrontes, and Barbera. The plants are located at very high altitudes, ranging from 1,900 to 2,600 meters above sea level, and benefit from the exceptionally sunny climate, with about 340 days of sunshine per year. This characteristic climate, combined with the significant temperature variations between day and night due to the presence of the Andes, creates the conditions for the optimal ripening of the grapes. In the winery, aging can take place in both oak barrels and concrete tanks, depending on the bottle in question.
