The White 'Da-Di' Avignonesi is born from the desire of Virginie Saverys, the owner of the winery, to enhance the indigenous grapes of Cortona, a territory suited for great whites. This wine is the result of four distinct vinifications: Orpicchio in amphora, Grechetto in carbonic maceration, Trebbiano in skin maceration, and Vermentino in cement. On the nose, white peach, green apple, and pineapple are perceived, leading to fresh aromas like lemon and elderflower. On the palate, it is vibrant, enveloping, and fresh, structured with a subtle tannic sensation. To be tried with fine dishes like a sea bass fillet with fennel
