The Pecorello of Ippolito 1845 enhances an ancient indigenous Calabrian grape variety that the winery has proudly helped to rediscover. To fully express the character of the variety, the grapes are treated with only steel in the winery. On the nose, it expresses notes of mature citrus fruits, yellow-fleshed fruits like apricot and peach, with iodized hints on the finish. On the palate, it is vibrant, balanced with marked persistence. Perfect with fish dishes from Mediterranean cuisine such as sea bream baked in parchment with cherry tomatoes.
