Garofano Severino
More than half a century ago in Copertino, in the heart of Salento, a young winemaker named Severino Garofano, destined to write a piece of history of quality Apulian wine, began his activity as a consultant for large wineries in the south, taking on numerous roles and becoming known for his research activities. In 1995, he acquired a vineyard, an ancient production facility, and a farmhouse from the mid-1800s and founded the Monaci company, thus linking his name to that of Negroamaro. Today Severino has retired to private life and the company is run by his children Renata and Stefano, who have inherited from their father all the passion and diligence necessary for the promotion of the territory and the production of great wines.
The Garofano vineyard extends over 20 hectares with an additional 16 hectares rented and is rooted in calcareous-clay soils. It mainly consists of Negroamaro grapes, cultivated on trellises and fertilized with cover crops of vetch. Pest control treatments and the use of pesticides are kept to a minimum. The result of a significant renewal process and substantial investments, the entire production process takes place in respect of tradition with the use of modern technologies.
The production includes not only the various bottles of Negroamaro but also very lively rosé wines and other reds rich in character and power, a lively and energetic expression of the Salento winemaking tradition. From the calmness and grace of the owners, extremely balanced and refined wines are born, but with great structure, capable of expressing a rich range of aromatic notes and wonderful and surprising flavors. Having become significant examples of great Italian winemaking expertise, the wines that bear the signature of the Monaci estate of Severino Garofano not only encapsulate the elegance and grace of the founder but also all the grandeur and character of the South.
